Ingredients
1 | You need of toasted sourdough slices (medium diced). |
2 | About of medium onion (finely chopped). |
3 | Take of cooking oil. |
4 | About of chopped tinned tomatoes. |
5 | You need of green chilli (finely chopped). |
6 | You need of ginger (finely chopped). |
7 | Approximately of turmeric powder. |
8 | About of red chilli powder. |
9 | It’s of ground cumin powder. |
10 | It’s of Salt (to taste). |
11 | Approximately of Toasted cashew nuts (to garnish). |
12 | Approximately of Toasted peanuts (to garnish). |
13 | It’s of Chopped parsley (to garnish). |
Cooking Instructions
Step 1 | In a non-stick pan, heat the oil and chopped onions, finely chopped green chilli and ginger. Sauté until the onions are translucent. |
Step 2 | Add the chopped tomatoes and the dry spices (red chilli powder, turmeric, ground cumin powder) and season to taste. Cook on medium heat until the tomatoes start to reduce.. |
Step 3 | Lowering the heat and toss in the pieces of diced toasted sourdough ensuring that all the pieces of sourdough are uniformly covered in spices sauce. Cook for another minute.. |
Step 4 | Take the upma off the heat, garnish with chopped parsley, toasted cashews and peanuts. Enjoy warm!. |
