Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and ½ teaspoon of the salt. A bowl of this hearty Winter Vegetable Soup, brimming with seasonal root vegetables, is a delicious filling meal for the cooler weather. You can easily cook Mima's Hearty Vegetable Soup by following 8 ingredients and 6 steps. Here is cooking guidance how you can easily cook it.


1 Prepare 5 of boiling potatoes.
2 Prepare 1/4 lb of peeled baby carrots.
3 Approximately 1 can of Rotel Mild Diced Tomatoes and Green Chiles.
4 Approximately 1 can of Del Monte Blue Lake Cut Green Beans.
5 About 1 can of Del Monte Golden Sweet Whole Kernal Corn (No Salt Added).
6 About 1 can of Del Monte California Diced Tomatoes (Green Pepper and Onion).
7 Prepare 4 dash of Lowry's Seasoned Salt.
8 About 3 dash of Lowry's Seasoned Pepper.

Feel free to add other vegetables you desire (other than red cabbage – turns it purple!)! Healthy low cal ones like zucchini, fennel, baby spinach (stir through at end), chopped beans, asparagus etc. will add more dimensions to the soup while keeping it very healthy. Cooking Instructions

Step 1 Cut up potatoes and carrots, add to pot.
Step 2 Fill pot with water, covering potatoes and carrots with about 2 inches of water.
Step 3 Drain juice from corn, add to pot.
Step 4 Add all other vegetables to pot.
Step 5 Add seasoned salt and pepper to taste.
Step 6 Let simmer on medium temperature until vegetables soft.
