Using the mat as a guide, carefully roll the California roll into a tight log. The California roll is one of the most favored sushi rolls and has been credited with popularizing sushi in the United States. This is a very good basic recipe. I make my sushi a little bit differently though. First I do not use any mayo with my crab – I like the flavour on its own.. Roll up rice mixture over filling, using the bamboo mat to lift and compress the mixture while rolling; remove plastic wrap as you roll. Remove mat; roll sushi rolls in sesame seeds.
