Easy Yummy Mexican Style Shrimp Ceviche

Feel free to experiment with other vegetables and seasonings. Shrimp Ceviche – This No Cooking Required Mexican-inspired ceviche recipe is light, fresh and full of flavor. Citrus marinated shrimp, tomatoes, cucumbers, onions, avocado and jalapenos make the most delicious and easy to make ceviche ever! You can have Mexican Style Shrimp Ceviche in 8 ingredients and just 4 steps. Here is cooking guidance how you can easily make it.

Ingredients

1 It’s 1 1/2 lb of Medium Raw Shrimp ( I use Frozen ).
2 Take 5 each of Tomatoes.
3 You need 1 bunch of Cilantro.
4 About 2 each of Cucumbers.
5 You need 1 each of Avocado.
6 Take 5 each of Chile Serrano (aka finger peppers).
7 Prepare 1 each of Concentrated Lemon Juice ( I use Real Lemon 32 oz ).
8 It’s 1 each of Vegetable Juice ( I use Clamato Picante with Clam 32 oz ).

Easy shrimp ceviche uses pre-cooked shrimp marinated in citrus juices with cilantro, red onion, tomato and avocado. Even ceviche newbies will love it! Shrimp ceviche is the perfect beginner ceviche because it uses pre-cooked shrimp. We know, some people are squeamish about raw fish, so bringing it to a party can be hit or miss.

Cooking Instructions

Step 1 Place frozen shrimp in a bowl of cold water to thaw out ( DO NOT USE HOT WATER… As it will cook the shrimp ). Peel the shrimp then cut into small bite size pieces. Place the shrimp in a container and fill with the lemon concentrate until fully covered..
Step 2 While the shrimp sits in the lemon concentrate, dice all of the vegetables and mix in a large bowl..
Step 3 The shrimp is ready after sitting in the lemon concentrate for about 20 minutes or when it's pink. Discard of the lemon concentrate and lightly rinse the shrimp ( we want to preserve some of the lemon on the shrimp ). Mix the shrimp with the vegetables and add the clamato or tomato juice. Add salt to taste..
Step 4 Let it sit in the refrigerator for at least 30 minutes. The longer it sits in the fridge, the better it will taste. Enjoy with chips or tostadas and some hot sauce like Valentina or Tapatio. Enjoy!.

Cool, peel, devein, and roughly chop shrimp. Squeeze limes into a medium bowl. Stir cilantro and diced avocados into chilled shrimp mixture. Combine cucumber, tomatoes, red onion, serrano peppers, and cilantro in a bowl. Needless to say, this shrimp ceviche is on heavy rotation.
